El distrito de Lucre muestra ingresos importantes por parte de la actividad gastronómica, es en
ese sentido que el trabajo de investigación midió el efecto de la actividad gastronómica sobre
los ingresos de los productores del distrito de Lucre en el periodo 2019, tal es así que pudimos
observar que los factores de oferta inciden el desarrollo socioeconómico de los productores de
trucha, ya que al realizar el cálculo de la rentabilidad dio como resultado un ingreso neto de
S/.3.99 soles por la venta de cada plato de trucha ,las cuales generaron una rentabilidad del
26.6%, la cual según los datos de ingresos que debe generar la actividad gastronómica para ser
rentable debe ser entre 15% a 25%, lo que nos indica que es muy rentable. En cuanto a la
demanda pudimos determinar que incide de manera directa en el desarrollo socioeconómico,
según datos recopilados, ya que existe una afluencia mensual de 265 clientes en promedio por
piscigranja tomando en cuenta solo fines de semana, por otro lado, según el factor de gustos y
preferencias, los consumidores que visitan las piscigranjas es principalmente por el plato de
trucha fresca (55%), lo cual demuestra que las piscigranjas cuentan con una ventaja competitiva
en relación con sus sustitutos, lo que ha derivado en un continuo desarrollo de la actividad
gastronómica, generando mayor afluencia de clientes, por lo tanto, el incremento de los
ingresos y calidad de vida de los productores.
Esta investigación parte como una iniciativa del programa IC-DS (Programa de Investigación
Científica para el Desarrollo Sostenible) del Vicerrectorado de Investigación de la Universidad
Andina, como asociado estratégico participó en el subproyecto titulado “Fortalecimiento de
capacidades para mejorar la calidad de los servicios de restaurantes de la Asociación de
piscicultores del Valle de Lucre, Cusco y consolidación como destino culinario especializado
en trucha en el sur de Cusco”, junto la entidad proponente del proyecto la “Asociación de
piscicultores del Valle de Lucre, Yanamanchi”, ganadores del concurso del Programa Nacional
de Innovación en Pesca y Acuicultura (PNIPA). The district of Lucre shows significant income from the gastronomic activity, it is in this sense
that the research work measured the effect of the gastronomic activity on the income of the
producers of the district of Lucre in the period 2019, so much so that we were able to Observe
that supply factors affect the socioeconomic development of trout producers, since the
calculation of profitability resulted in a net income of S /. 3.99 soles for the sale of each trout
dish, which generated a profitability of 26.6%, which according to the income data that the
gastronomic activity must generate to be profitable should be between 15% to 25%, which
indicates that it is very profitable. Regarding demand, we were able to determine that it directly
affects socioeconomic development, according to data collected, since there is a monthly influx
of 265 clients on average per fish farm taking into account only weekends, on the other hand,
according to the factor of tastes and preferences, the consumers who visit the fish farms are
mainly for the fresh trout dish (55%), which shows that fish farms have a competitive advantage
in relation to their substitutes, which has led to a continuous development of the gastronomic
activity, generating a greater influx of customers, therefore, an increase in income and quality
of life of producers.
This research starts as an initiative of the IC-DS program (Program of Scientific Research for
Sustainable Development) of the Vice-Rectorate for Research of the Andean University, as a
strategic associate it participated in the subproject entitled “Strengthening of capacities to
improve the quality of the services of restaurants of the Association of Fish Farmers of the
Lucre Valley, Cusco and consolidation as a culinary destination specialized in trout in the south
of Cusco “, together with the entity proposing the project the“ Association of Yanamanchi
Trout Producers “of the District of Lucre“, winners of the contest of the National Program of
Innovation in Fishing and Aquaculture (PNIPA).
